Kueh Tikus (rice flour noodles) is as common as bee hoon or kueh tiaw (both also rice flour noodles) sold in Kuching noodles stall . Kueh Tikus means "rat cake" in Hokkien. The shape of the Kueh Tikus is short and tiny, guess, was the reason for it to be called "rat cake" in the early days.
Kueh Tikus can be served dry or in soup.
Preparation for 4
When ready to serve, scoop cooked ingredients over boiled rice flour noodles, and garnish with parsley or cilantro and dried onions.
My son's favourite noodles kind............dry.
