Mee Mamak is a dish of thick egg noodles cooked in sticky and spicy sauce with tomato ingredients. It is a Malay cuisine and is served in most Malay stalls in Kuching or West Malaysia. Halal meats such as chicken and beef are usually the main meat ingredients. For a homestyle recipe, any choice of seafood and meat can be added with vegetable varieties to bring out the rich flavorsome gravies and taste of the noodles dish.
Prepare 1 lb pork meat slices.
Cooking Steps
Begin, by frying pork meat in 4 tbs cooking oil in a large skillet in medium heat until thoroughly cooked.
Add onions, ginger, chilli, carrots and tomato. For sauces: add 5 tbs tomato ketchup, 3 tbs pasta sauce, 2 tbs hoisin sauce or oyster sauce, 2 tbs chilli paste, 2 tbs chicken stock brand, 1/2 tbs pepper, 3 cups water, sweet potato flour or wheat flour mixture (2 tbs flour to 4 tbs water). Combine ingredients with meat. When steaming hot, add 2 eggs, and blend into cooked ingredients.
